Carrots They'll Eat
(Makes 4 servings)
These are sweet and delicious.
Ingredients:
1 lb carrots, scrubbed and sliced (or baby carrots)
1/2 cup apricot jam (I like
peach even better)
2 Tablespoons dairy-free
margarine
1 Tablespoon lemon juice
1/2 teaspoon grated orange
zest (I omitted once and it was still great)
1/4 teaspoon nutmeg
1. Cook carrots in boiling
water until tender (or cook in the microwave with a little bit of
water).
2. Drain.
3. Add remaining ingredients
and stir to coat well.
