Chicken Apricot Bundles
(Makes 8 bundles)

These bundles are easy to make and deliciously sweet. You could also use soy cream cheese
in place of the drained soy yogurt,
but it's a lot lower fat and just as yummy this way!

Ingredients:
2 (8 ounce) cans reduced fat crescent rolls
1 (10 ounce) can chunk chicken, drained and chopped
1/2 cup shredded cheddar soy cheese
1 (6 ounce) container plain soy yogurt, drained (see note below!)
1/4 cup of chopped dried apricots
1/4 cup of chopped pecans
1/4 teaspoon celery seeds (optional)

1. Unroll the cresent roll dough and separate into eight rectangles.
2. Place onto ungreased cookie sheet and press the perforations together.
3. Combine the remaining ingredients and spoon 1/4 cupful onto the center of each rectangle; bring the edges to the center and pinch to seal.
4. Bake at 375 F for 12 to 15 minutes or until golden.

NOTE: To drain the soy yogurt, line a fine mesh strainer with several layers of paper towels, set it over a bowl, and spoon in the soy yogurt. Cover the whole thing with plastic wrap and put it in the fridge overnight. Voila! By the next day it will have thickened to the consistency of cream cheese!
