Chocolate Chip Pancake Cookies
(Makes several dozen cookies)

I found this recipe online and renamed it because these are very flat and remind me of little
chocolate chip pancakes! They may not be the consistency of regular chocolate chip cookies,
but for being so low fat they certainly do a great job of fulfilling my cravings!

Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup unsweetened applesauce
2 Tablespoons soy margarine, softened
3/4 cup sugar
3/4 cup light brown sugar, packed
1/2 cup Egg Beaters
2 teaspoons vanilla extract
1 1/4 cup semi-sweet chocolate chips (make sure they're dairy-free)

1. Heat oven to 375 F.
2. Coat baking sheets with non-stick cooking spray.
3. In medium bowl, with wire whisk, combine flour, baking soda, and salt; set aside.
4. In a large bowl with electric mixer on medium speed, beat together applesauce, margarine, sugar, brown sugar, egg, and vanilla for two minutes or until creamy and light.
5. With mixer on low speed, beat in dry ingredients just until incorporated.
6. By hand, stir in chocolate chips.
7. Drop by rounded tablespoonfuls onto baking sheets; flatten slightly with back of spoon.
8. Bake 10 to 12 minutes, until lightly browned around the edges.
9. Let cookies cool on pan 10 minutes before transferring to wire racks to cool completely.
