Crispy Herb Baked Chicken
(Makes 4-6 servings)
The crispy
coating on this chicken makes it flavorful and tender!
This was adapted from a Hungry Jack recipe by SharonMello on the IBS
message boards.
Ingredients:
2/3 cup instant mashed potato flakes
1/3 cup grated soy parmesan
2 teaspoons parsley flakes
3/4 to 1 teaspoon garlic powder
3 lbs boneless, skinless chicken breasts
1. Heat oven to 375 F.
2. Spray a cookie sheet or 9x13-inch pan with non-stick cooking spray.
3. In medium bowl, combine potato flakes, Parmesan cheese, parsley
flakes and garlic powder; mix well.
4. Spray chicken with non-stick cooking spray; roll in potato flake
mixture to coat.
5. Place in cookie sheet or pan.
6. Bake for 45 to 60 minutes or until chicken is fork-tender and juices
run clear.
