Easy Garden Bake
(Makes 6 servings--although
my family got barely over 3!)
This is a light and delicious
dinner. It's so simple to make, and it's a great way to eat your
veggies!
Ingredients:
1 cup chopped zucchini
1 large tomato, chopped
1 medium onion, chopped
1/3 cup grated parmesan soy
cheese
1/2 cup reduced fat Bisquick
baking mix
1 cup soy milk
1/2 cup Egg Beaters or 4 egg
whites
1/2 teaspoon salt
1/8 teaspoon pepper
1. Heat oven to 4oo degrees.
2. Spray a 9-inch pie plate
with non-stick cooking spray.
3. Layer zucchini, tomatoes,
onion, and soy cheese in pie plate.
4. Stir remaining ingredients
until blended.
5. Pour into pie plate.
6. Bake 35 minutes or until
knife inserted in the center comes out clean.
7. Cool 5 minutes.
