Everyday Coffee Cake (Microwave)
(Makes 1 8-inch round dish)

This is a delicious and easy coffee cake that's been a favorite in my family for years.
It's so simple to whip it up and toss it in the microwave!

Ingredients:
1 1/2 cups reduced fat Bisquick
1/4 cup white sugar
1/2 cup soy milk
2 egg whites or 1/4 cup Egg Beaters  
2 Tablespoons unsweetened applesauce
1/3 cup reduced fat Bisquick
1/3 cup brown sugar (packed)
2 Tablespoons dairy-free margarine
1 teaspoon cinnamon
1/4 cup chopped nuts

Glaze:
3/4 cup confectioners' sugar
1 Tablespoon soy milk

1. In mixing bowl, stir together 1 1/2 cups Bisquick and white sugar.
2. Add 1/2 cup soy milk, egg whites, and applesauce.
3. Beat by hand, mixing well.
4. Pour into greased 8-inch round dish.
5. Blend 1/3 cup Bisquick, brown sugar, margarine, and cinnamon until crumbly.
6. Sprinkle over batter and sprinkle with nuts.
7. Microwave on HIGH for 5-7 minutes.
8. Cool 15 minutes; drizzle with fine glaze.
9. Serve warm.
10. Glaze: Stir together confectioner's sugar and 1 Tbsp soy milk.
11. From tip of spoon, drizzle glaze over cake in spoke fashion.
