Greek Chicken Burgers
(Makes 4 burgers)



This are simple and very unique burgers. The pitas really give them a Mediterranean flair!

Ingredients:
1 lb ground chicken (I used ground turkey and it still worked great)
2 Tablespoons chopped fresh oregano (or 1 tsp dried)
2 teaspoons finely grated lemon rind
1/2 teaspoon salt
1/2 teaspoon pepper (I used less)

TOPPINGS
lettuce leaves
sliced tomato
sliced cucumber (I omitted due to personal taste)
sliced black olive (I added some sweet pickle relish instead!)

2 pita pockets

1. Spray grill with cooking spray and preheat to medium.  
2. Using your fingers, gently combine burger ingredients in a large bowl, until blended.  
3. Form into burgers about 1/2 inch thick.  
4. Grill burgers for about 6-8 minutes per side or until juices run clear.  
5. Toast pitas on the grill during the last 3 minutes (be careful not to leave them on too long--I toasted mine until they were too crispy!).  
6. Cut pitas in half; place burgers into pockets and fill with toppings.
