Dairy-Free and Delicious Hot Cocoa
(Makes 1 serving)

A delicious alternative to milk-based hot cocoa! The amounts can be tweaked depending on how chocolatey you like it.

Ingredients:
2-3 teaspoons cocoa powder
2 Tablespoons sugar
1 cup vanilla soy milk

1. Pour the soy milk into a microwaveable measuring cup (or other cup) and microwave on high for 1 minute.  
2. Meanwhile, add the cocoa powder and sugar to a mug and stir together.
3. Pour the hot soy milk into the mug and stir well to combine.
4. Enjoy!

Note: If using plain soy or rice milk, you can add 1/4 teaspoon vanilla extract. I've also added almond extract with wonderful results.
