Italian Chicken and Potatoes
(Makes 6-8 servings)
This is a perfect meal for
people who like Crockpot cooking.
It's easy to throw together
and turns out tender and flavorful!
Ingredients:
6 boneless, skinless chicken
breasts (6 large or up to 8 small)
1 cup bottled fat-free
Italian salad dressing
2 teaspoons italian
seasoning, divided (I use 1 tsp each basil and oregano)
1 cup grated parmesan soy
cheese
8 medium potatoes, peeled and
cut into wedges
1. Place chicken in bottom of
large crockpot.
2. Sprinkle with half of the
Italian dressing, 1 tsp of the Italian seasoning, and half of the soy
cheese.
3. Place the potatoes on and
around the chicken.
4. Sprinkle with the
remaining dressing, seasoning and soy cheese.
5. Cook on high 6-8 hours, or
until the chicken and potatoes are tender (I think it would be fine
with anything over 5).
