Lemon Rice Pilaf
(Makes 6 cups)

This is a flavorful and healthy way to prepare rice!

Ingredients:
1 cup yellow onion, diced

1 1/2 cups converted rice
3 1/2 cups water
1 Tablespoon dairy-free margarine
1 teaspoon kosher salt
1 bay leaf
1/4 teaspoon pepper
Zest of 1 lemon, minced
Juice of 1 lemon

1. Saute onion in small amount of oil in a large saucepan just until softened.
2. Add rice and continue sauteing until it starts to turn golden.
3. Stir in water, margarine, salt, bay leaf, and pepper.
4. Bring to a boil, cover, and reduce heat to low.
5. Cook until liquid is absorbed, 20 minutes.
6. Remove from heat.
7. Stir in lemon zest and juice (can also add 1 clove of minced garlic, if desired).
8. Allow rice to steep a few minutes before serving.
