Banana Muffins
(Makes 12 muffins--or 8 for me!)



These muffins are moist and flavorful. They're a great way to use up over-ripe bananas.
I would recommend doubling them because the recipe doesn't make nearly enough!

Ingredients:
1 1/2 medium bananas, mashed (I like them nice and ripe)
1/2 cup sugar
1/4 cup Egg Beaters
1 cup self-rising flour
1/2 teaspoon baking soda
2 Tablespoons canola oil
2 Tablespoons unsweetened applesauce
1 Tablespoon water

1. Spray 12 muffin cups with non-stick spray or line with paper liners (I filled the cups about 2/3 full and only got 8 muffins).
2. In large bowl, combine all ingredients, stirring until just moistened.
3. Pour batter into muffin cups and bake at 375 degrees for 10-12 minutes, or until done (it took mine more like 15 minutes).

Note: I substituted 1 cup all-purpose flour plus 1 1/2 tsp baking powder plus 1/2 tsp salt for the self-rising flour.
